Tinola is a Filipino chicken soup dish. It is famous among Filipinos as a cold-weather dish. It is also what husbands feed their wives after giving birth because they believe it makes mothers produce more breastmilk. This is of course enjoyed with a plate of rice. It's very easy to make, it's just chicken, broth, some spices, and veggies. We love this because of the tasty broth. We first saute the onion, garlic, and ginger in a little oil then we add the chicken parts, most Fiipinos prefer using free-range, organic chicken. We add water to the chicken and let it simmer a long time to make the chicken tender and the broth to have the essence of the chicken and the mix of the sauted spices. Then we add pepper and salt to taste. Once the chicken is tender, we need to add the veggies and let it boil one last time for 5 minutes and it's done. The veggies added are hot pepper leaves and slices of unripe papaya.
