I've been scarce on Steemit because I am visiting my daughter in Texas this week.

After a couple disappointing meals when we dined out, one of the first things I did was make a quick trip to the local Aldi grocery store to stock up on some healthy foods and make my famous roasted mixed vegetable medley meal. This is my own recipe. I always add a something new to change it up a little -- feel free to do the same! For example, diced Granny apples add a delicious touch but I didn't have any onhand.🍏
Preheat oven to 400°F and line two large cookie sheets with aluminium foil for easy clean up. Wash and cut brussel sprouts, baby medley potatoes, sweet potatoes, cauliflower, grape tomatoes, sliced mushrooms, and red onions into bite sized pieces. Arrange vegetables on the baking pans and douse liberally with EVOO (extra virgin olive oil). Olive oil is a good fat that helps raise your HDL numbers. Add a good amount of minced garlic (at least 1 teaspoon), season liberally with sea salt and ground black pepper, a little crushed red peppers, a few shakes of soy sauce, a small sprinkling of apple cider vinegar for acidity, and whatever other spices you enjoy.
To kick things up, I added some SLAP YA MAMA All Natural Cajun Seasoning my daughter had.🌶
At this point, you can sample to taste the raw vegetables to check if the seasoning is to your liking and add more if you need to.
You'll need to spread the vegetables out so they are in a single layer. If they touch it's okay but do not layer the veggies or it will take too long to roast everything. After 15 minutes, remove the vegetables from the over, turn them over and bake for an additional 10-15 minutes. I prefer some brown crispiness on the edges of my vegetables so I leave them in a little longer.
